Boukovo / Chilli Flakes
The usage of boukovo is one of the ways that Greeks make their food spicier and hotter. Especially, in northern Greece has a distinct/outstanding role, taking place in many traditional dishes, like gyros and tripe soup (patsas).
Boukovo is a great source of fiber, folic acid, vitamin A, C, B6, K and manganese. The chemical compound that gives the hot taste is capsaicin.
It is combined with pickled cabbage and it can be used in soups and in cooked meat. Moreover, boukovo is great when it is used in a dish with bean soup. Finally, hot sauces usually contain large amounts of boukovo.
