Caper is a perennial shrub which originates from eastern Mediterranean. This great plant is known since ancient times and it was believed that it had healing and magical properties, as the ancient physician Dioscorides recommended the leaves and roots of the plant to disappear swellings.Caper’s buds are the part of the plant that is usually consumed, but in Greece and especially in Cyprus all parts are edible.

Caper belongs to superfoods, due to the numerous beneficial properties that it has. It is a plant with antioxidant activity that boosts the immune system and stimulates blood circulation and respiratory function. Furthermore, caper can relieve pain due to its high anti-inflammatory action. Caper is a great source of calcium, fatty acids (linoleic acid), vitamins and flavonoids.
