Yellow Brain (Tremella mesenterica)
Tremella mesenterica, the Yellow Brain Fungus, is mainly seen in winter, when it appears on fallen branches of deciduous trees. This attractive jelly fungus is found throughout Europe, however, it has been recorded in temperate regions of Asia, Australia and both North and South America. You need wet weather to find this fungus easily.
According to scientific studies the Yellow Brain mushrooms help against depression, stomach bacteria and enterobacteria, in which the ulcer appearance is attributed, gastritis and other related disorders. Moreover, these mushrooms reduce blood cholesterol, hypoglycemic and antitumor activity and enhance the immune system in animals. It has been reported in many publications the positive effect on health and rejuvenation of the skin. It is said that eating Yellow Brains on a daily basis increases hyaluronic’s acid production.
Yellow Brain is an odorless and tasteless mushroom; as a result it is not commonly used in cooking. However, when used (mostly in soups) it gives a jelly texture.
